With a new chef at the helm, changes are afoot at Herbie’s On the Park. We checked in with executive chef Joe Ruhland about tweaks he’s made to the menu, plans to hold special events on the patio and more. What’s your first food memory? Probably Thanksgiving at my grandma’s house in North St. Paul. She would always make this sausage and wild rice stuffing that was a family staple. Since she passed, it’s been up to me to try to re-create it. What did you want to be when you grew up? I played basketball growing up, and my dream was to do something involving sports in some way. Joe Ruhland, executive chef at Herbie’s On the Park in St. Paul What was your first job in food? The Como Park Zoo in St. Paul during the summers when I was in high school. I started at the Dippin’ Dots stand, then worked the grill at Zobata Cafe. How did you wind up in the restaurant business for good? I’ve always enjoyed food and cooking. It was a big part of my existence growing up. My mom and my dad were both awesome cooks. I decided to go to culinary school. It got the creative juices flowing, and I liked working with people in an active environment. It just kind of evolved from there. I’ve worked at restaurants and in special events catering, including owning Silver Spoon Catering in St. Cloud. Just before becoming the executive chef at  Herbie’s, I was executive sous chef at Target Center, also run by Levy. How has the menu changed? I’ve been at Herbie’s for more than three months now. When I started, they had just revamped the winter menu so we went with that. A few weeks ago we got rid of about a dozen items and added seven brand-new ones. I added some new fun things that are my style. I updated it to make it more Minnesota-friendly foods such as a walleye roll, kind of a Minnesota version of a lobster roll where Red Lake walleye from Minnesota is used. There’s also a bacon and beer-cheese poutine where we make our own beer cheese sauce with Summit Pale Ale. What’s your favorite dish on your menu? I’m a burger guy so a burger is my go-to every time we go out to eat. My favorite dish — and I think it is, unanimously, is the whole kitchen’s favorite dish — is the new bacon bleu burger. We sell a lot of burgers here with Herbie’s being affiliated with Wild game nights. We make this one with bleu cheese, thick-cut applewood bacon and a spicy fig jam that we make. One bite gets in every flavor that makes you want to keep eating. What’s the last thing you cooked at home? That’s the problem with chefs. We don’t have a lot of time to cook at home. Honestly, the last thing I remember cooking at home was pork chops with a honey mustard sauce a few weeks ago. And my daughter loves mashed potatoes. We could make mashed potatoes every night of the week and she’d be happy. If you had to eat or drink only five things for the rest of your life, what would they be? A Neapolitan-style pizza with the charred crust with the very simple and plain mozzarella, basil and tomato sauce. I like my pizza a little spicy, so I would add some red pepper flakes or anything to give it a little spice. I’d also choose any type of barbecue. A slow-cooked pork shoulder is my favorite cut. I’d also choose dark chocolate, French roast coffee and a good red wine. Maybe a Merlot. Investing a lot of creativity and energy in making Herbie’s the best it can possibly be and looking forward to summer. I’m a Minnesota guy and love winter, but who doesn’t love summer? We have a cool space overlooking the Rice Park. We’re looking to do some cool things on our patio, maybe add a chef’s table. We’re thinking of having an eight- to 12-person table right outside the back of the kitchen to have fun with the outdoors and serve specials to fit the season.
