Ode to the Onion

Yesterday we took a walk and practiced our inspiring Instagram poses. And ate clementines. Because this is what I get when I ask for a few…a 2 kilo bag. Because, well, they were in 2 kilo bags. Quick, uninspiring post today because we are headed to a soccer game in Nimes.  I love soccer. What […]

I honestly don’t know if people will be more thrown off by calling it a Low Country Grill, not a boil, or by the wasabi cocktail sauce. But if you stick with me and keep an open mind, I promise both will change your life.

I’m serious here. Both of these seemingly small nuances up the flavour of a typical boil and typical cocktail sauce 10 fold. And BONUS, this “cocktail sauce” has way less sugar than regular cocktail sauce which is surprisingly loaded with sugar! And DOUBLE BONUS, this NO DISHES vanlife grilling recipe uses no pans so very little clean up!! Triple win!!

A friend recently asked, “What does keeping Christmas mean?” I learned from internet research that keeping Christmas is an expression in Charles Dickens’ A Christmas Carol. Though the phrase was certainly used in the Victorian era, the origin goes back at least to medieval times. Keeping Christmas in the South recognizes the important role food […]

I love to slice limes On the scored wooden board With my sharpest steel Beneath the under-cabinet Fluorescent lights Where the bright green Glistening disks Wet as any living thing Weep up to sting my fingers.   I once mistook lemons as your favorite But you set me straight As I crushed ice in the […]

Kountry King's Kastle

It’s been an exciting and busy past couple of weeks for Margarita and me. The excitement comes from setting some goals and attaining them. We live in a rented house which has been a blessing to us. It’s more contemporary in many ways than the two houses we’ve previously lived in. I’m a person who […]

go get em

Today I made a vision board. A tangible place for all of my goals and dreams and ideas to rest while I get ready. It displays fresh coconuts filled with life giving water, swaying on Thai coconut trees.  I can close my eyes and hear the song of the palms and the lapping of the […]

A perfect bite of cheesecake is hard to resist. It’s tangy and sweet, light yet rich, and so packed with flavor that every velvety bite begs to be savored. An entire slice is an indulgence — but a bite-sized cheesecake? Entirely legal. Homemade cheesecake is not complicated to make, but it’s a chore to make party-perfect, bite-sized cakes. Thankfully, store bakeries and freezer sections provide a variety of bite-sized —and slightly larger— squares, rounds and mini-triangles that are ready to plate and serve. At its best, cheesecake is a smooth, slightly dense puree of cream cheese, sugar, eggs and flavorings poured into a fresh, buttery, cookie-style crust. Delicious variations include a touch of lemon or orange, or swirls of chocolate, strawberry, raspberry, pumpkin, peppermint and more. For more food and drink coverage follow us on Flipboard. But all kinds of things can go wrong: The crust can be too thick or thin, soggy, oily or even rancid. Fillings with long lists of ingredients tend to be so gummy, sticky and starchy that the cream cheese flavor is lost. Make sure you check the date  on bakery selections, as freshness matters. That said, in general, frozen cheesecakes are the better supermarket option. Here’s the scoop on the most decadent little cheesecake bites and their sad, gummy cousins. Except where noted, nutrition details refer to a 4-ounce serving, which ranges from 5 bites to a single triangle. The peppermint flavored bites are also good for those who love candy canes. Four bites have 600 calories, 44 g fat, 420 mg sodium, 16 g sugar, 8 g protein. $9.99 for a 7.2-ounce box of 9. (4 stars) Whole Foods Market Festive 4 Cheesecake These thin-crusted cheesecakes could pass for homemade. The cranberry orange walnut is stellar, and the creme brulee, hot chocolate and pumpkin all deliver distinctive punches of fresh, authentic flavor without too much sugar. More crust would be a bonus. A single slice has 390 calories, 26 g fat, 320 mg sodium, 26 g sugar, 6 g protein. $15.99 for a 32-ounce round of 8 servings. (3½ stars) Costco Mini Cheesecake Treats These pretty New York-style bites, which come in apple cinnamon, chocolate and white raspberry flavors, are fresh and boast appealing texture. The apple is terrific, but the raspberry and chocolate flavors could use more topping. Four pieces have 293 calories, 16 g fat, 227 mg sodium, 22 g sugar, 5 g protein. $10.49 for a 3-pound box of 54. (3½ stars) First Street Cheesecake Collection The thick, tasty crust on these handsome rounds complements the creamy, cheese-forward filling, but they could use a touch of lemon or vanilla. One 3-inch round has 410 calories, 28 g fat, 410 mg sodium, 24 g sugar, 6 g protein. A 16-ounce box of 4 cakes is $5.99 at Smart & Final. (3 stars) Archer Farms Cheesecake Bite Collection These adorable bites in brown-paper candy cups are too sweet and taste more like mousse than cheesecake, but they are decadent enough to make the plate. Five pieces have 363 calories, 24 g fat, 240 mg sodium, 25 g sugar. $6.19 for a 9-ounce box of 12 at Target. (2½ stars) Sara Lee French Style Classic Cheesecake This iconic brand is light and creamy, but it’s far too sweet and the texture is not a bit like traditional cheesecake. One 78-gram slice has 230 calories, 14 g fat, 220 mg sodium, 17 g sugar, 3 g protein. $1.99 for a 2.75-ounce slice at Safeway. (2 stars) Safeway Select Cheesecake Tray As nice as it is to have a selection of flavors, the oily crust, pasty texture and lack of cream cheese flavor in all four of these flavors make for a disappointing bite. One slice has 440 calories, 26 g fat, 230 mg sodium, 29 g sugar, 6 g protein. $9 for a 16-ounce round of 4 large slices. (1 star) [related_articles location=”left” show_article_date=”false” article_type=”automatic-primary-tag”] Raley’s 6-inch Variety Cheesecake The leaden, gummy texture of these cakes from the bakery section is anything but luxurious and the flavor is downright problematic. The oddball fats quash the flavor of cream cheese. If you have to pick a slice, go for the strawberry. One slice has 410 calories, 24 g fat, 280 mg sodium, 29 g sugar, 5 g protein. $6.99 for a 16-ounce round of four flavors.
