Each spring for the past five years Aubergine executive chef Justin Cogley has graciously welcomed stars of the culinary universe to Carmel as chef-ambassador for the Relais & Chateaux GourmetFest. Those stars are stamped by Michelin, the French tire company that publishes the most respected (and feared) culinary guide in the world. The most decorated Michelin-starred chefs in the world — the likes of David Kinch, Joshua Skenes, Hiroshi Nakamichi, Michel Troisgros — have cooked alongside Cogley at GourmetFest in Carmel. Now Cogley can show off a star of his own. On Monday, Michelin representatives took to a beachfront stage in Huntington Beach to announce to a live audience (and millions streaming on YouTube) the latest star-studded restaurants in its new 2019 statewide dining guide. Thanks to the blessings of alphabetization, Aubergine was the third restaurant announced in the one-star category, putting Cogley and Aubergine owner David Fink quickly out of their misery — and into culinary history as Monterey County’s first and only restaurant with a Michelin star. “Huge achievement,” texted Cogley, on hand and on stage for the live announcement. “It’s amazing to be included and bring worldwide attention to Carmel-by-the-Sea.” Cogley stood on that wind-swept outdoor stage, his white coat fitting just as smartly as chef-icons and fellow one-star winners Michael Mina and Gary Danko. In total, 27 new restaurants earned one-star status, upping the total in the state to 69. Fourteen restaurants earned two stars while seven reached the pinnacle of restaurant stardom with three. Even as he heard the news, Cogley couldn’t quite believe it. Since Aubergine opened in 2005, it has earned its share of accolades; impeccable service, gorgeous detail, vaunted wine list, highly pedigreed executive chefs, including Cogley, named by Food & Wine magazine as Best New Chef in 2013. Yet Michelin inspectors never made a visit. The guide only included the greater San Francisco Bay Area, and at times Los Angeles, but never Monterey County. Cogley had always been told it wasn’t possible to bring Michelin inspectors to smaller cities like Carmel. In March, though, Michelin announced a statewide expansion, recognizing California’s unique and diverse culinary landscape. “With access to many of the world’s best farms, food producers and vineyards, California cuisine is respected worldwide, not only for the quality of its ingredients but also due to the creativity displayed by its chefs,” said Gwendal Poullennec, international director of the Michelin Guides. Michelin inspectors noted that Aubergine “left a lasting impression, with a menu that boasts both local flavor and seasonality.” Aubergine executive chef Justin Cogley (without apron) and his crew. (Facebook) Those few words alone are enough to put Aubergine on the culinary map — both physically and metaphorically. Tiny Carmel now has as many Michelin stars as the state capital Sacramento. And that star will drive culinary tourism, as visitors dog-ear the only page ever devoted to Monterey County. The honor represents validation but also increases the pressure to maintain that star while striving for two … or perhaps, one day, three. “To be in the guide now, we’re just totally blown away,” said Fink, who confessed to goosebumps when he saw Aubergine’s page in the new guide. “It’s incredible, but just the beginning for us.” Fink said Aubergine’s culinary team thrives on pressure. “People want to work for (Justin), and to be recognized among the best in the world, the only one between Los Gatos and Los Angeles, it just makes us want to be better.” Michelin surveys restaurants in 31 countries. Its 120-year-old star system builds reputations or erodes them. It propels chefs to celebrity, crushes others. It can validate or infuriate. For Cogley and Fink, though, they have earned a chance to bask (at least briefly) in a limelight never experienced by a local restaurant. After the announcement, they enjoyed celebratory toasts at a festive reception, a lavish dinner and a chance to rub elbows with the titans of their industry. “Thanks to my team,” Cogley said. “Years of hard work has paid off.” That team operates each night in perfect precision at the exclusive, nine-table restaurant inside Fink’s hotel L’Auberge Carmel. Cogley capitalizes on the finest ingredients, yet employs a restraint that allows them to shine. Despite showing such deference, his technique, attention to detail and creativity help transform those ingredients into something transcendent. He lifts vegetables to new heights. Morels become the star next to chicken mousseline thanks to the deft use of ramps, crispy chicken skin and herb dust. Local green asparagus comes alive next to green almonds, orange peel, nasturtium and trout roe. Not restrained by a single culinary style, Cogley brings Asian flavors to the forefront. He punctuates Pacific gold oysters with yuzu emulsion and cucumber gelee. He reveals how shiro dashi plays well with lobster. By the same token, pastry chef Yulanda Santos puts on a dessert master class each night, creating artfully delicious counterpoints to Cogley’s savory offerings. Santos will play with maple-scented candy cap mushrooms, olive oil emulsions and puffed grains — and can turn a ubiquitous carrot cake on its ear. The daily changing eight-course Tasting Menu checks in at $185 per person. Guests may dip into the deep, 2,500-bottle wine cellar — and into their wallets — for $155 more. While most of the Michelin starred restaurants are wildly expensive, the guide counters that price point with its annual Bib Gourmand selections. Originally introduced in 1997, the Bib Gourmand category highlights restaurants that serve high-quality meals that include two courses and a glass of wine or dessert for $40 or less. On May 28, Michelin announced its 2019 Bib Gourmand winners, and Carmel scored again as inspectors gave a nod to Mediterranean-themed restaurant Yafa. Ben Khader, a native of Jordan, opened Yafa in 2013 at the corner of Junipero and 5th in Carmel. The menu features Middle Eastern specialties such as lamb, hummus and kebabs, but also more mainstream food such as pasta, grilled seafood and steaks. Bib Gourmand inspectors found Yafa “nothing short of charming. From the father-and-son team manning the front of the house, to the live music, to — of course — platters full of flavorful Mediterranean fare.”
